There are people who analyze the dish, the technique, textures, taste, and service... but few, very few know how to appreciate the soul and the feeling that those of us who dedicate ourselves to this craft try to transmit. They appreciate not only the finished product but "the soul", the intangible. There are people who, in a single bite, completely undress the cook, revealing what is not part of a recipe, which cannot be measured or valued but which is inevitably and intangibly always there: his voice.
